Maxxi's Sayulita Space Tacos

We were making dinner last night and we had salad rolls. My god-brother, Maxxi, was a little freaked out by the Vietnamese salad rolls so we called them Maxxi's Sayulita Space Tacos. If you have any brothers or sisters or even know any, you know that sometimes if you change the name of food it changes their opinion. That's what happened with Maxxi. The salad rolls are like tacos because you are rolling up delicious ingredients in flat circular wrappers! You can easily buy all the ingredients in Sayulita.


- 8 rice wrappers
- 1 cup shredded lettuce
- 1/4 cup chopped fresh basil
- Hot water in a bowl
- 1 shredded carrot
- Rice or mung bean noodles
- Peanut sauce (optional)

Peanut Sauce Recipe:

- ½ peanut butter
- 2 Tablespoons soy sauce
- 3 Tablespoons rice vinegar
- A splash of fish sauce (optional)

Blend or Mix

Chop all the ingredients and display in bowls on the table. Fill a large shallow bowl with hot water. Dip one rice wrapper in the hot water for 5 seconds to soften. Lay rice wrapper flat on your plate, and place desired amounts of noodles, carrots, lettuces and basil in the center. Roll the space roll like a burrito. Then dip in the peanut sauce or soy sauce.
